Chef Ernie Adler’s Tips for Choosing the Perfect Grill

STOP!  Don’t run to that big box store for a grill (yet).  To master the fire you first need to have good equipment.  Be as selective in buying a grill as you are buying all of your kitchen appliances.  Your guests, taste buds, and wallet will thank you for it.  Best of all you can do it with 5 simple things to consider:

#1: Cooking fuel (gas is the most convenient, charcoal, or wood).
#2: Number of people you cook for = grill size.
#3: Accessories: Buy no less than 3 burners and go high on the BTU output, consider accessories like a must have side burner, rotisserie, infrared, searing zone, and a smoker box.
#4: Stand alone, on a cart, or built into an island kitchen.
#5: Budget. Expect to pay just below $1,000 to over $20,000 for a durable grill that will perform well and hold up for more than a few years to a lot of use and the elements.

Now it’s time to shop.  For built-in islands get the dimensions from your contractor and for stand-alone measure your overall cooking space.  Read up on the internet first-there are a lot of sites to get information on manufacturers.  Next head out to a specialty outdoor store that carries gas grills such as Weber, Napoleon, Lynx, Bull, DCS, and Fire Magic.  For ceramic Kamado cookers Green Egg and Primo, and charcoal/smokers Weber, Horizon, and Grillworks Argentinian style.   There are a lot of manufacturers and designs so take your time.  “Grill the salesperson” about the BTUs, ignition system, materials (such as cast iron, steel, porcelain coated metal), parts, warranty and repairs, and add-ons.

Before you know it you’ll be grilling like a professional.
